Pakistani and Indian Recipe - Pulao Dish

Pakistani Palao Recipe

Ingrediets: Yakhni: 1/2 kg mutton, 1 medium sized onion, 1 stick cinnamon, 6 cloves, salt to taste, 4 cups of water.

Cut meat in pieces and an onion in four. Simmer all ingredients in water till meat is tender and liquid is half. Cool and strain.

Pullao: 1 cup Pullao Rice, 1 large onion, 1 pod garlic, 1 piece ginger, 2 green chilies, 1 tea spoon saffron, 4 large cardamoms, 6 cloves, 4 peppercorns, 1 cup yogurt and 2 tablespoons oil.

Garnish: 8 almonds, 12 raisins, 1 medium onion, 2 hard boiled eggs.

Soak Pullao Rice, slice onions fine. Grind green chilies, ginger and garlic to a paste. Heat, crush and soak saffron in 1 tablespoon water. Brown onions in oil and add whole spices. Add paste and Pullao Rice. Fry for 5 minutes. Add meat from yakhni and yogurt. Cook on low flame for 15 minutes. Add yakhni and cook on low flame till Pullao Rice is almost ready. Add saffron. Cook till rice is fully tender.

Garnish with fried almonds, raisins, onions and sliced eggs.
